Gluten Free Chocolate Chip Cookies

You can easily make gluten free chocolate chip cookies out of any favorite recipe by replacing just a few ingredients.

In my family we love having chocolate chip cookies for dessert on Saturday nights. The pan cookie kind are our particular favorite. However, a problem arose when Mom found out she was gluten intolerant.

We tried several gluten free chocolate chip cookie recipes, but didn’t really like any them. Our favorite was still our tried and true, albeit gluten-filled, cookie recipe. So we decided to try a little experimentation. We tried replacing the wheat flour in our favorite recipe with Rice Flour and Garbanzo Bean Flour.

While they cookies themselves weren’t bad, they left a sort of metallic aftertaste in the mouth. Not exactly pleasant. So we kept experimenting and the answer came in the form of pancake mix.

Pancake Mix For Cookies?

We’d been using Pam’s Gluten Free Pancake Mix for quite a while for pancakes. We’d found it even made better pancakes than traditional wheat-filled pancakes. So we decided to give it a shot in the cookie mix. It took us a few tries to get the ratio just right, but we eventually ended up with an excellent batch of cookies and have been using it ever since.

The ratio we ended up with was replacing all the wheat flour in the recipe with a mix of 1/4 garbanzo bean flour, 1/2 rice flour, and 1/4 Pam’s Pancake mix. You can do this with any recipe to make gluten free chocolate chip cookies. It all depends are personal taste preference, so it may take a couple tries to find a mix you like, but once you find your perfect mix, you’ll never want to go back to wheat cookies again.

There are a few tricks when working with gluten free chocolate chip cookies. Don’t over bake them. Cook them until they’re almost done, then let them finish baking on the sheet for a minutes before trying to remove them. If you find the cookies are too crumbly, decrease your rice flour and add in more garbanzo or Pam’s. If the cookies taste slightly metallic, decrease the amount of garbanzo flour, and add in more Pam’s.
