Old Fashioned Peach Freezer Jam

It’s peach season here in NY, and there are certainly peaches a plenty to be had. So many in fact that there are often more peaches than one can eat during the season. So what to do to preserve those wonderful peaches and stretch their tasty goodness out for a longer period? Make peach freezer jam of course!

The nice part about making peach freezer jam is that you don’t need perfect peaches to do it. Often you can get “seconds” at a farm market for less cost than nicer peaches. Just perfect for a batch of peach freezer jam!

The Ingredients

You will need:
5 pounds of peaches
2 and 1/2 cups of sugar
1 tablespoon of cornstarch
1 quarter cup of cold water
A tablespoon or two of cinnamon (optional)

The Process

Peel your peaches and put them in a large pot to let them cook down. Be sure to stir often to prevent the peaches from sticking to the bottom of the pot. After a few minutes, add in the sugar and cinnamon. Continue to let the peaches cook down until they begin to gel.

When the peaches begin to gel, mix the cornstarch in the quarter cup of cold water. Add it to the peach jam slowly and stir well.

Let the jam cool and then pour into containers with lids. (Old cottage cheese containers work great for this). Keep one in the fridge for current use and put the rest in the freezer until you’re ready to use them. The jam will keep for several months in the freezer.
